In this research were evaluated the optimal conditions for the production of fat from removes the flesh in the Curtimbres company in Itagüí S.A., located in the department of Antioquia, Colombia. Parameters were measured as the temperature, volume of cooking water, liquid waste treatment by coagulation-flocculation, to obtain products as the clarified that could be used in the washing of the fur zone and a solid residue which was realized a composting treatment, therefore it shows to be a viable and economic technology.
